Cupcake Chef! Gluten Free Addition

So my family (we are really strange this way) is having a cupcake contest this Saturday. There are three teams my niece and I are on one team, her husband and one of my brother in laws in the other team, and then my other brother in law is on a team alone.
So they are being judged on all the usual stuff, presentation, consistency and taste. They have to be gluten free and that is really the only stipulation. I will feature the winning recipe here on the blog, and honestly if the losers (cough cough) are any good, I'll share those too. My niece and I came up with our flavor last week and spent Monday trying to come up with the recipe, we have been texting back and forth our ideas to improve it. I think it's going to be really yummy. I will say her husband and dad may be the dark horse in the competition. ( I hear they are making spread sheets and weighing flour, lol. This is serious business. I'll update with pictures and of course the recipe this weekend.
