Triple Chocolate Cupcakes!

                                                   Chocolate Chocolate and Chocolate!
I am not a chocolate on chocolate kind of girl, but my sister is, and it was her birthday today. So here it is the chocolate lovers cupcake. It's a chocolate cupcake with a chocolate pudding filling and frosted with a  whipped ganache.


Cupcake
makes about 3 dozen cupcakes 350 ° 21 minutes
2 sticks of butter (room temperature)
4 Eggs
2 1/2 cups of sugar
1 3/4 cup flour
1 teaspoon Baking Powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened cocoa powder
1 cup milk
2 teaspoons vanilla

Whisk together all dry ingredients. In a measuring cup measure our milk and add vanilla. In a separate bowl cream butter and sugar together.








Add eggs in to butter and sugar mixture one at a time and mixing between each. Alternate adding wet and dry ingredients to mixture in thirds and beating well between each. Scoop in to cupcake forms and bake.
Pudding Filling
I made this the night before and it worked out just perfect.
1/2 cup powdered sugar
1/3 cup unsweetened cocoa powder
3 tablespoons cornstarch
2 cups milk
2 teaspoons vanilla extract


In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture does not have any dry lumps.
Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla.
Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming, and chill in the refrigerator.


Whipped Chocolate Ganache



1 4oz Ghiradelli 60% bar
1 4oz Ghiradelli 70% bar
1/2 cup whipping cream
1/2 stick  butter (room temperature)
1 cup powdered sugar
1/4 cup milk
1 teaspoon vanilla

break chocolates up and transfer into a heat proof bowl.
 Heat cream until bubbles form around the edge of the pan, pour cream over the chocolate.
Let sit for 1 minute then stir until combined.
Add butter to the chocolate and stir until everything is melted and combined.
Whisk together sugar, milk, and vanilla in another bowl until combined.
Pour the sugar mixture onto the chocolate mixture and stir until combined and smooth.
Let sit at room temperature until thickened, stirring occasionally
Beat with an electric mixer until fluffy.
















Cupcake Assembly
 Let cupcakes cool completely. With a sharp knife cut a nickle size slice off the top of the cupcake and remove "lid" use the knife to kind of stir around in the cupcake to make the hole bigger and dump crumbs out. Spoon in a generous amount of chilled pudding and replace lid. They don't have to be pretty, you are putting ganache over them. :)

Ganache will not be a really stiff consistency but it will set. Frost cupcake and enjoy.
