Nuefty Cups

Appetizer #6

This is a great appetizer to make along with the spanakopita. You can use the left over phyllo dough and they are super easy.

Nuefty Cups
2 full sheets of phyllo dough
2 tablespoons of butter
1 (6oz package) Fleur De Lait Neufchatel cheese Garden Vegetable Variety.
If you have trouble finding this cheese, a Neuftchatel is a cream cheese with 1/3 less fat and it's creamier. You can buy the Philadelphia brand cream cheese in the garden vegetable with 1/3 less fat.


Preheat oven to 350
cover phyllo with damp cloth. Cut phyllo in to 3 1/4 (ish) inch squares. Have ready an ungreased muffin tin. Place 1 square in the bottom of muffin tin with the corners pointing up. Brush lightly with butter. Top piece with another square of phyllo alternating corners and brush lightly with butter. Do this one more time so you have three layers with butter on top of each. Make sure to flatten the bottoms of the squares so they will be able to stand on their own. Brush the corners lightly with butter and bake for 8-10 minutes or until edges are golden brown.
Remove for pan and fill with cheese. (you can be creative and really fill them with anything you would like. Left over phyllo dough can make some pretty easy and impressive appetizers.
