Mini Posh Pizzas

I made these last year for a get together at my home for Christmas. They were a big hit and I can't wait to make them again. If you pre cut the toppings assembly will go much easier, which of course I did not do.

Mini Pizzas
1/3cup olive oil
1 tablespoon Tabasco
2 large cloves of garlic ( minced)
1 Teaspoon dried, crushed rosemary
1 16oz packet hot roll mix with yeast packet
1 1/4 cup of hot water
all purpose flour

Toppings
1 diced tomato
1/4 cup crumbled goat cheese
2 tablespoons chopped parsley
1/2 cup shredded mozzarella
1/2 cup pitted green olives
1/3 cup roasted red pepper strips
1/2 cup artichoke hearts
1/3 cup sliced green onions.

In a small bowl combine olive oil, Tabasco, and rosemary. In a large bowl combine hot roll mix, yeast packet and 2 tablespoons of the Tabasco mix. Mix until dough pulls away from the sides of the bowl. Pull dough out on to a lightly floured surface and kneed until smooth. Preheat oven to 425. Cut dough in to quarters and each quarter in to 10 equal pieces. Roll each piece in to a ball and flatten. They will rise quite a bit, so make them really flat. Place them on a cookie sheet. Brush each with the Tabasco mixture. Top each mini pizza with about 2 teaspoons of toppings, Mix them up. Do some red pepper and goat cheese, some tomato olive and parsley, you can even do a few with just parsley. Bake them for 12 minutes or until dough is puffed.

Enjoy. They are great for a casual or formal party and you can top them with whatever you would like. I'll be making them this Christmas again.

Tip
If you are doing them for a holiday such as Christmas, you can use a cookie cutter to cut the dough in to the shape of starts, or pine trees before you top them.
